Valentine’s Day Cupcakes 

I love baking cupcakes. They’re super easy & you can customize them to suit any occasion. These cute little vanilla ones with their pale pink frosting & little gummy hearts are perfect for someone special.

So get your aprons at the ready, dig out your mixing bowls, and…..on your marks, get set, go! Happy Baking!

  • 1 1/4 Cups All Purpose Flour
  • 1 1/4 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 Large Eggs
  • 3/4 Cup Granulated Sugar
  • 1 1/2 Tsp Pure Vanilla Extract
  • 1/2 Cup Vegetable Oil
  • 1/2 Cup Buttermilk


  1. Preheat oven to 325 degrees & line a cupcake tin with cupcake liners.
  2. In a medium bowl, mix together the flour, baking powder, baking soda & salt. Set flour mix aside.
  3. In the bowl of a stand mixer, beat the eggs & sugar until pale & fluffy.
  4. Add the vanilla & oil and mix until combined.
  5. Turn mixer to low & add half of the flour mixture, mix until incorporated.
  6. Add half of the buttermilk & mix until incorporated.
  7. Repeat with remaining flour mix & buttermilk, scraping down the sides of the mixing bowl as needed. Batter will be thick.
  8. Pour batter into lined cupcake tin. Fill to about 1/2 full.
  9. Bake for 14-17 minutes or until a toothpick in the centre comes out clean. Cool in tin for a couple minutes, then remove. Once the cupcakes are completely cooled, pipe with frosting and decorate with a little heart gummy.


  • 1 Cup (2 Sticks) Unsalted Butter, at room temperature
  • 1/2 Pound Confectioners Sugar (Icing Sugar), sifted
  • 1/2 Tsp Pure Vanilla Extract
  • Pinch of Salt
  • Pink Gel Colouring


  1. Using an electric mixer, beat butter on high until light and fluffy.
  2. Reduce speed to low & gradually add the sugar, then the vanilla & salt.
  3. With a toothpick add a tiny bit of pink gel colouring to the frosting & beat until smooth.

My Fall Wedding Essentials

Hey Guys! So I’m trying something new today.

Ever since I was a little girl I wanted to have a fall wedding (fall & winter are my favourite seasons) unfortunately that wasn’t the case. We got married in early May.

Many years married now, I still love to look at wedding magazines that feature fall wedding trends. So, I’m going to share my fall wedding essentials with you.

Cakes. Traditional cakes are fine, but why not go for something a bit more eye catching. Naked or semi-frosted cakes are quite beautiful. They have a sort of rustic charm to them. I like them because they kind of mimic the changing season, how all the leaves are falling and trees are bare. 

I’ve seem these a lot lately. A bold, jewel toned coloured cake.

Flowers & Decor. 2015’s fall wedding colour seems to be this bold burgundy wine colour that they’re calling Marsala. It’s so romantic. I love it paired with bronze or copper accents.

I’m also a sucker for a long farmhouse table. There’s something very inviting about all sitting together at one long table.

Details. Fall coloured flower petals scattered down the main aisle runner. Cozy flannel blankets for your guests to wear if your having an outdoor space. Little touches like bronze pens to write the guests names on place cards.IMG_3258
No cheesy bridesmaid dresses here. My plan was to have elegant long dresses in either a rich blue or that burgundy colour that is so popular at the moment.


The dress!! To me, fall screams for lace or ruffles…something dramatic. A long train, maybe a sleeve…and a blinged out shoe. Let’s all take a moment to appreciate the gorgeousness of this bronze sparkly heel. Amen!

The groom. Of course the traditional black suit/tux will always be an essential, but why not try a cool looking grey suit or navy tux. Personally, I’m a huge fan of the navy tux. It’s great against any skin tone because it’s not as harsh as black. My Brit would rock a navy tux!
